Bucket List Item #188 – Eat at Hiša Franko
I was the most excited for this bucket list check out of all the things we did in Slovenia and it was even better than expected. In case you aren’t familiar with the restaurant, Hiša Franko is run by Ana Ros and her husband Walter. Ana was named the best female chef in the world (you heard that right, THE WORLD) for 2017 and Walter is a wildly talented sommelier and cheese connoisseur. The two are married and are some sort of culinary powerhouse couple. I’ve been wanting to go to this restaurant for years, so when we were in Slovenia we had to go for our anniversary.
The menu was insane. There were so many interesting combinations that were completely unexpected and delicious. I’ve had a long journey to get to where I am now with food. I used to be such a picky eater and Dave has influenced me in so many amazing ways, but I’m still more of a finicky eater than I would like to be. A lot of the food I was served I would never even venture to try, but Ana made me like things I never thought I could. There were ingredients like cow tongue, sheep brain, beets, etc. All things I would generally avoid and that didn’t stop me from loving it. Everything was so creative and the flavors so intricate in how they complimented each other. I can understand why Ana is a leader in the culinary world because she is an absolutely genius.
We also got to meet Walter and he gave us a personal tour of his wine cellar, which was too cool. And I have to add that the wine pairings were out of this world and the cheese? Well, if you know me you know I live for cheese and I will be dreaming about his cheese lollipops for the rest of my life.
The food at Hiša Franko is not the only draw though. It’s also a small hotel on an estate, so you can stay there, too! We didn’t get to stay there this time around as we were on a bit of a budget, but we know it’s beautiful and word on the streets is that the breakfast spread included in the stay is out of this world. It’s also in the Soča Valley and the area is beautiful! The waters are the most beautiful teal and the surrounding mountain region is like a fairytale.
It’s been over a year now since we visited Hiša Franko and remembering the experience again has me wanting to do it again. I hope to be back in the motherland again someday (this is where my family is originally from) as I didn’t get to complete my Slovenian check list. I’ll tell you one thing; I will never take another trip to Slovenia without coming back to Hiša Franko and you shouldn’t either!
